oh my.

cherry pie.

This was my first time trying the cherry pie Larabar, and it was quite TART! I liked it though. Tart suits me. ;)

Today was a day of many firsts. It was also the first time I ever prepared tofu.

Once again, a pleasant surprise!

I prepared two sauces, a hot sauce, and a soy sauce.

I just dumped olive oil and random spices in each one, but they turned out really well. After draining and pressing the tofu, I rubbed the sauce on each piece and baked it for 30+ minutes on 375. (While that was going on, I snacked on a few blue chips.) I ended up baking way more than I ate, so prepare to see a good bit of tofu over the next few days.

With my tofu I had reheated green beans. YESSSS!

They were actually pretty good as far as reheated vegs go.

I also had two slices of pineapple.

This was a definite yes. Pineapple makes me happy.

This whole plate made me happy, actually. Very happy. I was so proud of my tofu baking skills.

Thanks for the tips, Caitlin! I also definitely hit up Ms. Kath and Ms. Gliding Calm’s blogs for tips as well. They have very good instructionals if you are a tofu newbie like me.

After my tofu I tried another new dessert, but it was a big fat fail, so let’s pretend like that little guy did not happen. Instead I fell back on an old favorite.

Dates + PB! I remembered to pick up dates at the grocery store! Good thing I did, cause those are the only kind of dates I’ve been getting lately. 😀

Alright, I’m off to find something to keep me occupied until bedtime. Like yoga. That would be nice.

I could not make myself get out of the bed this morn.

I also could not make myself think of a breakfast.

Until I spied my bag o’ carrots in the fridge.

Ah, carrot cake oatmeal it was!

  • 1 carrot (grated)
  • 1/2 cup oats
  • 1 cup almond milk
  • vanilla and cinnamon to taste
  • agave nectar

With all my breakfast dreams realized, I scooted off to work.

Part of my lunch hour I spent playing with this link.

Don’t look so surprised.

The other part I spent consuming this:

PB & J on Great Harvest bread.

That is raspberry preserves and whole food’s PB, respectfully.

I did not want to miss out on any extra nutrients, so I tossed some romaine leaves on the side, and called it a salad.

Between throwing things in my mouth, I somehow also found the time to write this post.

Unfortunately, time’s running out so… see ya later!

Thank God for oatmeal.

It kept me full until I could conjure up a later lunch of various leftovers and fixins.

Leftover pizza + broccoli

Fruit, prepared by Mama D.

And I could in no way resist a fluffy biscuit prepared by Mama D.

Topped with blueberry + raspberry preserves.

Afterward, Meredith captured me perfectly in all my Sunday afternoon glory, loading the dishwasher.

My that was a lot of pots dirtied up in the sink! I did a perfect job arranging them in the dishwasher; you can put money on that one.

I attempted to catch up on my Google Reader for a bit, but then Julie called and wanted me to come over. After hanging up the phone, I realized that she only lives about 4 miles away, and so I strapped on my running shoes and ran over. Easy peasy.

Actually I was stanky and sweaty when I arrived; not quite what she envisioned, I don’t believe.

Ha, well the element of surprise was fun, and my run back home was even easier and breezier. I paced around a 10 minute mile the whole time, and just zoned to the iPod. What a way to sneak in 7+ miles!

‘Twas well rewarded.

Trader Joes Apricot Mango Greek Yogurt (1/2 cup), Trader Joes Trek Mix Granola, black and blue berries, dried mango and apricots.

Great Harvest Nine Grain bread with White Chocolate Wonderful PB.

I love random unplanned dinners such as these. I am all for a Hugh Jass salad, or fancy pasta, but sometimes a girl just wants yogurt and peanut butter toast.

After I showered and caught up on the happenings in People mag, I may or may not have put a hurting on some pita chips.

Only God knows.

Head and shoulders,

Banana oatmeal w/ Mixmygranola topping.

Good messages.

2 Peter 1:3-7 – Add / Supplement / Build these traits into your life of faith: He has given us everything we need for living a Godly life!

Godliness is God-likeness – Godliness is this: the quality of life, that when people are around you, they think of God (Vernon Grounds). Becoming Godly is like a bride getting ready for her wedding day.

  1. Thirst – Psalm 42:1-2 / Psalm 27:4 – Spend daily time with God… Acts 13:22 will result!
  2. Focus – Romans 8:5-8 Msg / Matthew 6:6 Msg / Romans 3:31 Msg
  3. Worship – Matthew 6:24-26 Msg. What or whom we worship determines our behavior. Godly behavior results from God-worship!
  4. Serve – 1 Peter 4:10 / Galatians 5:13 – Godly people serve other people. They don’t whine and complain about what ‘s happening to them. Instead, they find joy in service.

There is a fountain full of grace and it flows from Emmanuel’s veins,
It came and it healed me,
It came and refreshed me,
It came and washed my sins away!

So I will rejoice,
I will rejoice,
and be glad.

It is such a gorgeous day today.

I couldn’t start it anyway but with oatmeal.

Savory oatmeal, to be exact.

I love this stuff so much. I literally scraped the bowl clean. It’s such a nice change from my usual sweet oatmeal combos.

  • Steel Cut Oats
  • egg
  • hot sauce (extra for you, Allison!)

That’s it! So easy, and so yummy. You can even eat if for dinner. 😉

I let my oatmeal settle (about and hour and half, if you wondered) and then went to meet Kath and Stacey for a 5 mile run.

We ran along the greenway, which I had never ran on before. It was so nice, and the leaves are already falling! Autumn is on it’s way, folks!

It was nice to have someone to pace/chat with while running, since I usually run by myself in my iPod zone.

After our run we hit up Great Harvest for some bread,

I sampled the Nine Grain (I think?) and loved it so much I bought a whole loaf.

Kath also got us a few buns to sample, which I was most excited+pleased with.

Since Great Harvest is so conveniently located next to Trader Joes, we all did a little shopping.

As I was checking out the cashier inquired if I had been running. Ah, what gave that away? The sweat dripping from my forehead? 😀

Despite my snack of a bread sample, lunch was still on the menu.

I used one of the buns Kath gave me, and made a banana+AB (barney butter, if you want to be specific) sandwich.

Look at all the seeds on that Dakota bun! ‘twas the perfect crunchy accompaniment to my mushy sandwich filling.

I also had pineapple,

and carrots with spinach & artichoke hummus.

Carrots are the perfect hummus vehicle. I am most pleased I remembered to pick up a bag.

This was one of the most satisfying meals I have had in a while. It may have been very yellow and orange, but I was happy.

I forgot how much I love banana and nut butter sandwiches. They are sort of like PB&J. Made for each other.

Kind of like this beautiful day and I were made for each other. I just want to go sit in the sun and relax.

Alas, my room is not going to clean itself. 😦

It’s gonna be a bright bright bright bright sun shiny day
Look all around there’s nothing but blue skies
Look straight ahead there’s nothing but blue skies

Then again, a girl can hope, can’t she?

Ugly snack.

TJ’s Fiberful + PB filled pretzels. Ugly, but yummy. Unfortunately I underestimated my snackiness and did not bring enough to fulfill me.

So I had an extra cup of coffee. I am sure that would not have had anything to do with my late bedtime the night before or anything. Grandma. I know. Call me names.

I have a confession to make. I snacked more than that. But I did not picture it. It was random + embarrassing. Like Cinnamon Toast Crunch straight from the box. The bulk box from Costco.

I have been really stressing at work this week, in case you did not pick up on that vibe. Stress = mindless snackage on my part. I also have not exercised as much as I wanted this week, which is no help.

Next week my goal is to destress, do more yoga, clear my mind and subsequently the mindless snacking should stop. No more Cinnamon Toast Crunch out of the box.

Tonight my goal was just to relax.

But first, look what the UPS guy brought me!

My Go Red giveaway goodies I won from Meghann!

So excited. New yoga mat minus the stinky foot smell my old one had is a definite incentive to do more yoga this coming week.

Now let’s get to this evening.

Working out the stress:

I Do Not Hook Up is a great stress reliever. I don’t, by the way.

Much better. The reserved and relaxed restaurant version of me.

Kelly Clarkson can do wonders for the soul.

I know. Boys are so unphotogenic.

Pizza is too.

I did the best I could, I think I am improving. Slowly, but surely. No flash was used in the making of this photo of Wild Mushroom Pizza, shared by Kasey and I. We each had two pieces and I brought the rest home with me for lunch. Kasey paid for it.

I knew I liked that kid.

Well, Grandma is off to bed at the late, late hour of 11:55 pm on a Friday night.

First I need to take my Metamucil.

Due to my late arrival to mi casa last eve, I slumbered long this morning.

And had a quick breakfast of PB&J+flax toast with berries and grapes on the side.

Then I headed off to make my merry living!

Which was made much merrier by the arrival of lunchtime.

Lunchtime brought with it more Egg+Avocado.

Egg+Avocado in a PITA!

With a generous shake of hot sauce upon those babies.

Orange slices in the middle, for Vitamin C and color.

Oh Egg+Avocado, how I love thee.

I also love this video:

Oh, you gotta love a Southern lady that can crack a good joke!
