Wow, the Why I Run stories are great! Keep ‘em coming! 😀

I was also inspired by Megan’s post this morning, simply titled ‘Running’. In it she talks about the health benefits of running, as well as how she became a runner. Like many of us, when Megan began her journey of running, she couldn’t even run a mile. Her hard work and dedication paid off and Megan just finished the Susan G. Komen 5k in NYC this past Sunday, and also just signed up for her first half marathon! Way to go Megan!


Look what I found in the cabinet this morning.



I went from 😦 to 🙂 when I realized what this meant.

Oats in a jar!


Never mind the flax. I went a little flax happy this morn.

Under the flax lies a big batch of pumpkin oats. Yum!

  • 1/2 cup oats
  • 1/2 cup water
  • 1/2 cup almond milk
  • 1/2 cup pumpkin puree


This was simply divine. There are no other words.

Lonchi ‘twas yummy as well.


Just a simple veggie wrap consisting of:

  • carrot
  • zucchini
  • romaine
  • hummus
  • flat out


It was what was on the side that counted.


Sweet tater fries, it’s been too long!


Due to this being a particularly Hugh Jass tater, I was not able to finish all the goodness that was these lovelies. It’s just as well, because that’s a lot of orange.

  • pumpkin
  • carrot
  • sweet potato

In just two meals, too!


Surprise baking revealed!


Some of you were right, in guessing chocolate zucchini cupcakes! These lil’ buggers raised $35.00 for breast cancer research. Now I’m off to the post office so that the lucky winner will receive them in a timely manner.

But first, a few things that are making me happy this Tuesday.


Like my headband? I do. 

I like even more the fact that I swiped it off my sister’s dresser. It doesn’t even belong to me.

I’m also really excited for my new bible study that starts tonight. I am hoping to make lots of new friends.

What’s better than a chocolate peanut butter cookie?



Makes me happy, happy, happy.

So, the whole 30 day shred thing? Making me sore, sore, sore. Apparently I don’t use my legs enough because they would barely move during my 5 miler today. Ah, well I used the time to jam to some rockin’ tunes and barely noticed my legs were not working like they should. I also dreamed of a peanut butter and jelly sandwich the whole time.


So that’s what I had upon completing my run. A PB&J and grapes. I should probably mention that before my run I noshed on some peanut butter filled pretzels. It’s barely worth mentioning because they don’t exist anymore.

Wow, that’s a lot of peanut butter in one post. Ah, well.

After I downed my PB&J, I did Level one of the 30 day shred again with my shred bud, Mere. Why do I keep punishing myself?

In other news, has anyone else’s inboxes been flooded with e-mails from Myspace lately? It’s like they just realized they aren’t cool anymore and they are trying to win you back. One email read:

Hey Whitney, come see what your friends are up to on Myspace!

Um yeah. I know what they are up to. I have Facebook and Twitter. It’s 2009 Myspace. You are outdated.

Except for creepy old men and musicians. They still use you.

Breast Cancer Research – Susan G. Komen Foundation

Breast cancer research is something that is very close to my heart. It has hit very close to home, and I know I’m not the only one who has been affected by this terrible disease.

Here’s your chance to make a difference!

Also, I am running in the Race For the Cure – Charlotte on Oct. 3rd. I set my fundraising goal at a very modest $125.00, but feel free to wander over and check it out. Donations are always welcome!


This morning started wonderfully.


Blueberry Banana French Toast


  • 1 smashed banana
  • almond milk
  • 1 egg
  • vanilla
  • cinnamon
  • flax



  • In 1 pan


  • TJ’s Blueberry preserves
  • fresh blueberries
  • sprinkle of powdered sugar

Make this. Your mouth will thank you.

In other news, guess who got to take home the leftover salad last night?




I also grabbed 3 strawberries and added to it 1 nectarine, 1/2 an avocado and an elderly mango.


Due to the funkiness of the elderly mango, this was not the BEST SALAD ever, but it was close. Next time I will try to find a more youthful mango.
