I haven’t forgotten what a great snack yogurt is.


  • vanilla greek yogurt
  • Kashi Go Lean
  • dark chocolate chips

Far from it. I have only expounded upon it’s wonderfulness as a snack.

This was perfect for today, because I had my new Tuesday worship with my small group from church at 7, so I needed something that would last until I got home around 9:30.

I loved my new worship! God is really blessing me with a great job, a great church and wonderful friends. I ran into a few people at service that I had not seen in awhile, so that was really nice.

The speaker, Todd Phillips, was amazing and gave a wonderful sermon on getting through the storms of life. I believe the live stream will be posted soon; I will link to it when it is. I would love for you guys to hear it as well, because it was so powerful. I found myself just nodding in agreement the whole time. Don’t you love that?

After I left the church, I did some crackberry checking, like any good crack addict does. I was so glad to see an e-mail from everyone’s favorite homegirl saying she got her college care package! I have renewed faith in our Postal Service. I just sent that package Friday, and it made it to Vermont by Tuesday. Ally, be on the lookout for your cupcakes. The way my post office runs, they might be there tomorrow!

When I got home around 9:30, I made a very snacky snack plate for dinner.

Almond butter and hummus dippers.

Do me a favor. Dip these in almond butter. You won’t be sorry. You’ll probably thank me.

Orange tinted apples.


These apples weren’t really orange, but for some reason my camera kept insisting they were. Whatev, I’ll roll with it.


Pretty, pretty snack plate.

After consuming all that was delicious in my life, I proceeded to moan and groan until all those chips settled in my tum.

Then I swore sweated through Level 2 of the shred. 

Now I must get to bed, for morning comes early.

Wow, the Why I Run stories are great! Keep ‘em coming! 😀

I was also inspired by Megan’s post this morning, simply titled ‘Running’. In it she talks about the health benefits of running, as well as how she became a runner. Like many of us, when Megan began her journey of running, she couldn’t even run a mile. Her hard work and dedication paid off and Megan just finished the Susan G. Komen 5k in NYC this past Sunday, and also just signed up for her first half marathon! Way to go Megan!


Look what I found in the cabinet this morning.



I went from 😦 to 🙂 when I realized what this meant.

Oats in a jar!


Never mind the flax. I went a little flax happy this morn.

Under the flax lies a big batch of pumpkin oats. Yum!

  • 1/2 cup oats
  • 1/2 cup water
  • 1/2 cup almond milk
  • 1/2 cup pumpkin puree


This was simply divine. There are no other words.

Lonchi ‘twas yummy as well.


Just a simple veggie wrap consisting of:

  • carrot
  • zucchini
  • romaine
  • hummus
  • flat out


It was what was on the side that counted.


Sweet tater fries, it’s been too long!


Due to this being a particularly Hugh Jass tater, I was not able to finish all the goodness that was these lovelies. It’s just as well, because that’s a lot of orange.

In just two meals, too!


Surprise baking revealed!


Some of you were right, in guessing chocolate zucchini cupcakes! These lil’ buggers raised $35.00 for breast cancer research. Now I’m off to the post office so that the lucky winner will receive them in a timely manner.

But first, a few things that are making me happy this Tuesday.


Like my headband? I do. 

I like even more the fact that I swiped it off my sister’s dresser. It doesn’t even belong to me.

I’m also really excited for my new bible study that starts tonight. I am hoping to make lots of new friends.

Lara bars make me smile.

You know what else makes me smile?

You guys.

When I posted I was considering running 7 miles and needed some encouragement, your comments were awesome. They kept me pumped the entire run, which was a pretty nice 7 miles, despite my ankles hurting towards the end. I really need new shoes. Gonna have to budget for those.

I must say the comment that really made me say ‘I’m going to do it’ was from Chandra.

She said:

Do it, do it, do it!!! I’m going to attempt 4-5 miles with hopes that my chest congestion clears up this afternoon and lets me breathe.. So do it for me in case I can’t!! 😉

That really hit home for me. I run because I love to run, but some days it’s all I can do to make myself hit the pavement. Her comment made me think about my dearest uncle. He is in a wheelchair. Has been since a car accident when he was sixteen years old. What I take for granted; running down the street is something that he would love to be able to do just one more time. When I run my marathon, it’s going to be for my uncle. I will never take my running for granted because of him. In just an instant, it can all be gone.

What if I couldn’t run? That’s why I ran today.

For my after run fuel I had a bean ‘burrito’.


  • refried beans
  • jalapenos
  • taco sauce
  • cheese
  • romaine leaf

And some hummus + corn chile dip with blue chippers on the side.




I just love romaine ‘tacos’ and ‘burritos’.

Dessert was banana soft serve topped with an almond butter mix and marshmallows.


I know, the marshmallows kind of ruin the whole healthy effect I was going for with the banana soft serve. Ah well, it was a substitution for my beloved coconut, which we were out of, strangely. 😉

Chocolate Almond Butter ‘syrup’

  • 1 spoonful almond butter
  • cocoa
  • vanilla
  • dash of honey
  • dash of almond milk

Stir, stir, stir and pour over your frozen good of choice.

After polishing off that bowl of heaven, I did some baking. YUM. You shall have to wait and see what it was.

Hey, hey peoples!

Good times I have been having in the last 24 hours. Don’t worry, you can read all about it here in a minute.

Last night for dinner I ate a bowl of veggie soup,


along with a side of crackers and grapes,


and went to a gathering at my mom’s church. Food was provided, but it was not the sort I eat (as in animals), so I made sure I was well fed previously.

Afterwards I went to a friends house that I grew up with to reminisce about old times, and eat.

I was pleased to find that the eats were very Whit-friendly. I should hang out with these girls more often! 😀


Pita chips, pretzel crisps and PB & CO! You know I dove into that headfirst.




And some deliciously ooey gooey brownies that I had a piece of. OH.MY.HEAVENS. Delicious.

I had such fun chatting and catching up that before I knew it, Cinderella’s coach had turned to a pumpkin, and ‘twas time to get meself home!

I crawled into bed at a very un-Whit like time of 1:30 am. No blogging for me last night!


I was up at 7 am, because today was a very special Saturday. No I did not run a race like some people, nor did I run at all.

Today was volunteer day at my church, so at 7:20 am I was in the grocery store buying bananas.

Apparently I signed up for a lot of events.

  • Give blood
  • Goodie baskets for local fire and police stations
  • Love, Inc – helping an elderly lady

I must have three personalities or something.

Anyway, I agreed to provide apples and bananas for the gift baskets, go to a blood drive and work in the home of the elderly lady.

I didn’t make time for breakfast, so I had coffee on the way, as well as a cup at the church. Around 9:30 I broke out a Clif Z-bar to tide me over, as well as some pretzels that our group leader provided.

At Miss Pearl’s (the elderly lady) we painted, mended, cleaned and weeded. Around 1, we stopped for lunch. I had a nectarine (out of my purse. So handy!), small bag of peanuts and a few more pretzels.

After lunch, we finished cleaning everything up, and home we went; leaving Miss Pearl’s house in much better shape than when we came.

I wish I had pictures, but it was just one of those times it did not feel appropriate to whip out my camera to document something for the internet.

Ya know?

Upon arriving home I should have dug into some salad, given my lack of veggies at previous meals, but instead I chose something equally as nutritious.


Edy’s Butterfinger Ice Cream.

I haven’t had ice cream in forever (well a few weeks. It feels like forever.) I was really craving it after our long day and it hit the spot.


Today’s eats have been rather random. I am ready for an actual meal for dinner. What shall it be?

I hear there is a Greek Festival this weekend. I bet there will be food there. I might be there too.

Proof I have a lovely mother:


She sent me to work with this gorgeous bouquet of flowers out of her garden. Thanks Mama D! They certainly brightened what is a grey and rainy day.

I also realized this morning that until you are out of PB & J your cupboards aren’t really bare.



PB&J Oatmeal.


Now my cupboards are very close to bare. ‘Tis okay, I am making a Trader Joes shopping list as I write.

Lunch was leftover pasta.


With a side of mangled carrot+hummus.


It was the kind of lunch that makes you go to the grocery store.


Seriously lacking in greenery. Seriously.

I am hoping to catch a yoga class (my last one :() and hit up Trader Joes later. See ya!

It’s September 2nd. That means Happy Birthday to my Grandma! 😀

I celebrated with a breakfast cookie.


Mine had:

  • 1/3 cup MixMyGranola
  • 1 smashed naner
  • 1 spoonful almond butter
  • 1 scoop protein powder
  • almond milk
  • craisins
  • agave nectar

I loved how the fruit gave it a bit of a kick! YUM!

I also made Meredith one.


Hers contained:

  • 1/3 cup of oats
  • 1 smashed naner
  • 1 scoop protein powder
  • 1 spoonful PB
  • cocoa powder
  • agave nectar
  • almond milk

She does not often eat oatmeal, so I am not sure how she felt about it. She left for work early, and the only evidence I found was the picture on my camera.

Due to the late rising of the sun down here in the south, plus mine and Meredith’s new 30 day shred plan, I am going to start doing my workouts at night. The weather is perfect for it! It was a mere 58 degrees when I left for work today, and the high is 70.

Loves it.

Also loved the last of my tofu.


Tofu Tacos!


  • 1 carrot
  • 3 leaves romaine
  • 3 pieces baked tofu
  • hummus
  • soy cheese


I just layered the ingredients on the romaine leaves and enjoyed the heck out of some tacos.


And lest I forget, some bnut squash tails on the side.


Now I am off to get some work done, and then workout + Grandma’s birthday dinner!

It is such a gorgeous day today.


I couldn’t start it anyway but with oatmeal.

Savory oatmeal, to be exact.


I love this stuff so much. I literally scraped the bowl clean. It’s such a nice change from my usual sweet oatmeal combos.

  • Steel Cut Oats
  • egg
  • hot sauce (extra for you, Allison!)

That’s it! So easy, and so yummy. You can even eat if for dinner. 😉

I let my oatmeal settle (about and hour and half, if you wondered) and then went to meet Kath and Stacey for a 5 mile run.

We ran along the greenway, which I had never ran on before. It was so nice, and the leaves are already falling! Autumn is on it’s way, folks!

It was nice to have someone to pace/chat with while running, since I usually run by myself in my iPod zone.

After our run we hit up Great Harvest for some bread,


I sampled the Nine Grain (I think?) and loved it so much I bought a whole loaf.

Kath also got us a few buns to sample, which I was most excited+pleased with. 

Since Great Harvest is so conveniently located next to Trader Joes, we all did a little shopping.


As I was checking out the cashier inquired if I had been running. Ah, what gave that away? The sweat dripping from my forehead? 😀

Despite my snack of a bread sample, lunch was still on the menu.


I used one of the buns Kath gave me, and made a banana+AB (barney butter, if you want to be specific) sandwich.


Look at all the seeds on that Dakota bun! ‘twas the perfect crunchy accompaniment to my mushy sandwich filling.

I also had pineapple,


and carrots with spinach & artichoke hummus.


Carrots are the perfect hummus vehicle. I am most pleased I remembered to pick up a bag.


This was one of the most satisfying meals I have had in a while. It may have been very yellow and orange, but I was happy.

I forgot how much I love banana and nut butter sandwiches. They are sort of like PB&J. Made for each other.

Kind of like this beautiful day and I were made for each other. I just want to go sit in the sun and relax.

Alas, my room is not going to clean itself. 😦
