Daily Plate

This oatmeal rocked my face off!


  • 1/2 cup pumpkin puree
  • 1/2 oatmeal
  • 1 cup water
  • 1 T pumpkin butter
  • cinnamon
  • 1 T white chocolate wonderful PB

Love it!

Of course when I got to work, I discovered that my boss had brought in a package of those scones I love so much. In mini form!


I wanted to eat one right away, but I promised myself I could have it for lunch ‘dessert’.

Speaking of lunch, the main focus of that lovely meal was this gorgeous Swiss Chard that Mama D. grew!




I just love Swiss Chard, it’s so beautiful and colorful. When I spied it lying on the counter last night I immediately laid claim to it for lunch today.

I was glad I did.


I made a Swiss Chard, Cheetah and Tofu salad!


The bottom layer is the cheetahs, topped with the Swiss Chard [Swiss Chard is one of those words I feel should be capitalized. No swiss chard here, it’s Swiss Chard!], tofu and ketchup!


On the side I had some grapes that fell out of the refrigerator on me this morning. Who am I to tempt fate? It was meant to be.




You may remember that I posted a few weeks back about shedding those ‘vanity pounds’ that have managed to creep back on. Since then I have noticed several other bloggers in the same wagon, including Alison. Alison has been using to The Daily Plate to track her calories, so I clicked over to see what all the fuss was about.

Honestly, this is one of the best weight loss tools I have ever found on the web! I love it. I started tracking my calories in a book after I wrote my post, because I’ve tried several other calorie counting websites and hated them. Not so with The Daily Plate! It was love at first sight!

If you are trying to shed a little weight and want a convenient place to track your calories I really recommend this website.

Now if you’ll excuse me, I’ve got some calories to track. 😉

Cookie Tuesday

Fall is finally here!

It was crisp and cool when I left for work this morning.

Much like my breakfast.


Cool breakfast cookie and crisp strawberries. If you can call strawberries crisp. These kinda were.


See? Crisp.

The falllllll weather is GAW-JUSS. Just the kind of weather that makes you want to get outside and go for a run. 😦

I had a couple of people tell me to use a foam roller on my calf, so perhaps I will be able to go for a run one day this week. The high temps are supposed to be in the 70s all week, so it should be FABULOUS weather for such.

I had the most fantastic fall lunchie.

I would call this a spice cookie, if there is such a thing. It was really interesting, but tasty. Me like.

Between breakfast and lunch, I would say this has been a Cookie Tuesday. I’m still planning for a Cookie Friday, so today will just be a make up day from last week. 😉

Hey hey!

Still got a sore leg over here, but I’m not complaining. It could be much worse, judging by some of your comments. I’m just going to do like you guys said and take it easy. Ya’ll are right, it’s not the end of the world. It just feels real close. 😉

This morning I incorporated my new jam into breakfast.


French toast w/ blackberry jam and a pretty strawberry.


My French toast was whole wheat bread dipped in a mixture of:

  • soy milk
  • flax
  • 2 egg whites
  • vanilla
  • cinnamon

‘Twas yummers, and the new jam was just PERFECT! Thank you so much, Je!

Work was work, but I pretty much have the office to myself today, and that’s nice. 😀

I guess you could say I’m a bit of a loner. 😉

Lunch was chikin nuggets.

Ketchup. It’s actually the real stuff. No disguise or fake name here.

I had grapes to keep my chikin and carrots company.


I’m a bit obsessed with grapes at the moment, but the minute I make a trek up to an apple orchard you can bet I’ll forget all about these babies.


I hate to be fickle with my affections, but that’s just the way the cookie crumbles.

Speaking of cookies, I haven’t had one for a week. They were sorely missed during No Sweets Week. Cookie Friday will be well celebrated this week!

In general it wasn’t too hard to replace fruit for cookies and cake, although the camping trip was pretty hard. I didn’t have any COOKIES or CAKE though. We won’t mention candy corn, cause some of that may have snuck in my mouth intermittently.

It’s September 2nd. That means Happy Birthday to my Grandma! 😀

I celebrated with a breakfast cookie.


Mine had:

  • 1/3 cup MixMyGranola
  • 1 smashed naner
  • 1 spoonful almond butter
  • 1 scoop protein powder
  • almond milk
  • craisins
  • agave nectar

I loved how the fruit gave it a bit of a kick! YUM!

I also made Meredith one.


Hers contained:

  • 1/3 cup of oats
  • 1 smashed naner
  • 1 scoop protein powder
  • 1 spoonful PB
  • cocoa powder
  • agave nectar
  • almond milk

She does not often eat oatmeal, so I am not sure how she felt about it. She left for work early, and the only evidence I found was the picture on my camera.

Due to the late rising of the sun down here in the south, plus mine and Meredith’s new 30 day shred plan, I am going to start doing my workouts at night. The weather is perfect for it! It was a mere 58 degrees when I left for work today, and the high is 70.

Loves it.

Also loved the last of my tofu.


Tofu Tacos!


  • 1 carrot
  • 3 leaves romaine
  • 3 pieces baked tofu
  • hummus
  • soy cheese


I just layered the ingredients on the romaine leaves and enjoyed the heck out of some tacos.


And lest I forget, some bnut squash tails on the side.


Now I am off to get some work done, and then workout + Grandma’s birthday dinner!

Happy September 1st!


I had another first this morning. The famed breakfast cookie.

This cookie contained:

  • 1/3 cup oats
  • 1 smashed naner
  • cocoa powder
  • 1/2 scoop protein powder
  • agave nectar
  • 1 teaspoon barney butter 
  • almond milk


A first, but not a last. Not by a long shot.

Kudos to Gina for inventing this baby and Alison for eating it so much. I was inspired by you two, fo’ sho!

What was not inspired was me getting out of bed this morning. I love fall, but the dark mornings get to me. I swear the sun did not shine until at least 6:45 this morning. There was no way I was going running in the dark, so that’s postponed until after work.

Speaking of work, that means I got a lunch break.


Behold, the ‘fu+’cado+craisin salad.


  • 1/2 avocado
  • 4 pieces spicy baked tofu, chilled and cubed
  • handful of craisins
  • small head of lettuce


Money shot.

I also had a slice of bread on the side.


It was Harris Teeter brand, and I am not sure the exact name of the bread. Yummy, though.


This salad was the most delicious combination of flavors. I seriously recommend it. Now if I can only recreate that sauce I put on the tofu…

oh my.


cherry pie.

This was my first time trying the cherry pie Larabar, and it was quite TART! I liked it though. Tart suits me. ;) 

Today was a day of many firsts. It was also the first time I ever prepared tofu.


Once again, a pleasant surprise!

I prepared two sauces, a hot sauce, and a soy sauce.

I just dumped olive oil and random spices in each one, but they turned out really well. After draining and pressing the tofu, I rubbed the sauce on each piece and baked it for 30+ minutes on 375. (While that was going on, I snacked on a few blue chips.) I ended up baking way more than I ate, so prepare to see a good bit of tofu over the next few days.

With my tofu I had reheated green beans. YESSSS!


They were actually pretty good as far as reheated vegs go.

I also had two slices of pineapple.


This was a definite yes. Pineapple makes me happy.


This whole plate made me happy, actually. Very happy. I was so proud of my tofu baking skills.

Thanks for the tips, Caitlin! I also definitely hit up Ms. Kath and Ms. Gliding Calm’s blogs for tips as well. They have very good instructionals if you are a tofu newbie like me. 

After my tofu I tried another new dessert, but it was a big fat fail, so let’s pretend like that little guy did not happen. Instead I fell back on an old favorite.


Dates + PB! I remembered to pick up dates at the grocery store! Good thing I did, cause those are the only kind of dates I’ve been getting lately. 😀

Alright, I’m off to find something to keep me occupied until bedtime. Like yoga. That would be nice.
